Commercial Seed Oils

Not all oils are created equal. The safest options for cooking are coconut oil, palm oil, butter, and ghee. These are saturated fats, which are more stable and resistant to oxidation than unsaturated fats, even those found in olive oil. While olive oil contains beneficial compounds, its single unsaturated structure makes it susceptible to damage from exposure to air, light, and heat. This means that many bottled vegetable oils are already compromised before they even reach your kitchen.

Despite marketing claims, canola oil is not a healthier choice. It’s particularly prone to oxidation due to its omega-3 content, which breaks down quickly. Similarly, while seafood is a nutritious whole food, separating and consuming marine oils in isolation can increase the risk of oxidation and reduce their benefits.

Do not use manufactured vegetable oils high in inflammatory omega-6 fatty acids (corn, soy, canola, safflower, sunflower, grapeseed, cottonseed, avocado) that easily break down into toxic aldehydes (yes that includes the most famous aldehyde – formaldehyde). Even olive oil can break down during cooking; use it only cold as a salad dressing or sprinkled on vegetables.

For cooking, it’s best to avoid unsaturated oils, whether mono- or polyunsaturated, as they deteriorate quickly under heat. The rise in vascular disease, cancer, and macular degeneration correlates with the widespread use of processed oils. Decades ago, margarine was promoted as a healthy alternative, but we now know better, and the health impacts of such choices often only become clear later in life.

Changing the oils you use can be a powerful step towards better health. While the effects of poor dietary fats may take years to show, it’s never too late to make positive changes. Read your labels diligently and start to eliminate seed oils from your diet. Choose restaurants that cook with coconut oil or butter, and don’t hesitate to ask questions about the oils they use. Supporting establishments that prioritise organic and health-conscious practices can make a real difference. By making informed decisions, you can protect your health and enjoy meals prepared with oils that support your well-being.
